Dish machine temperature log sheet

A dish machine temperature log is a daily record of the wash temperature, the final rinse temperature and, on a low temp machine, the sanitizer ppm. Print this blank sheet and tape it beside the machine.

High temp machine: final rinse at the manifold must reach the minimum on the data plate (the FDA Food Code gives 165°F for a stationary rack, single-temperature machine and 180°F for others). Low temp machine: sanitizer ppm must meet the label.

Using the log

What should a dish machine temperature log include?

The date and time, the machine, the wash temperature, the final rinse temperature and, for a low temp machine, the sanitizer concentration in ppm, then pass or fail, the initials of the person who checked and what was done about a failure.

What temperature should a high temp dish machine reach?

The FDA Food Code sets the sanitizing rinse at the manifold at 165°F for a stationary rack, single-temperature machine and 180°F for other hot-water machines, and not above 194°F. Your machine's data plate and your local health department may set different numbers, so use theirs.

What should a low temp dish machine log?

The chemical sanitizer concentration measured with a test kit, in ppm, against the number on the sanitizer label, plus the wash temperature. A low temp machine does not rely on a hot final rinse, so the sanitizer reading is the important one.

How often should the log be filled in?

Most kitchens check at opening and again during a long service. Ask your health department or your chemical company what they expect for your kitchen.

Do you service dish machines?

If you are the chemical or lease company, DishRoute Log keeps this log for every restaurant on your route, with your technician's readings beside the kitchen's own, and gives each kitchen manager a login.
